I did search and UFC 7 winner was Marko Ruas. He trained in Luta livre , jujutsu, judo , mauy tai , boxing , kickboxing and ABADA-Capoeira but not in ninjutsu.

Therefore, Jennum only needed one fight to win the UFC 3 tournament (normally a fighter would have had to participate in four matches to win). This anomaly prompted the UFC to change its rules, requiring alternates to win a preliminary fight to balance the advantage of being an alternate.
Both of the main fighters forfeited due to injury.
So, you had an alternate ninjutsu player vs. a Goju/Japanese Jujutsu player because, the main fighters forfeited.
