since I have virtually no training or defense against grappling, I’ve made up my mind that my best defense when encountering a grappler is to stay a distance and use my kicks to keep them at bay. if they come in for a takedown, I’ll knee or kick them in the face (depending on how far away they are). I want to know if ths is a good defense though. I would preferably like to hear it from someine who actually trains in a grappling disciple.
Standing on one foot and giving your opponent your other leg can actually be a pretty bad takedown defense.
Yes, knees have stopped takedowns. The thing is, unless you train grappling, you aren’t going to be comfortable and prepared for the manner and tempo that a grappler will enter (hint: if you can kick their face on the way in, there’s something wrong with their takedowns).
Fortunately, grapplers can show you proper, high percentage ways to neutralize a takedown.

At the very least you need to learn how to sprawl from a wrestler. Preferably a successful scholastic wrestler.

No, that won’t stop a takedown. The only way it would be guaranteed to stop a takedown is if you could somehow guarantee that you will have a 100% hit percentage AND a 100% knockout rate. Otherwise, it might hurt somewhat but they’ll be able to go through it anyway. If nothing else, because there’s momentum.
Permalost is right, giving them a free leg and shifting your weight forward in a kick will help make their takedown easier. Especially if you don’t sprawl or control the head or something first.
That being said, it is definitely possible for a striker to stop a grappler. It happens in the UFC all the time. BUT, the best way to stop a technique is to be familiar with it. Nothing will help you stop a takedown better than intimately knowing how a takedown works.
If you can’t afford the time or money to study grappling, at the very least find yourself a training partner who is proficient at takedowns. You can’t train to defend against something you don’t see in training.

Unless you kick like a mule, no it will not. By your own description, “isshinryu kicks are pretty fast because they are made in a snapping motion and we dont keep are kicks in the air for very long.”, you kick with insufficient force to get the job done. Snappy kicks are rarely strong enough to stop a proper double leg takedown.
It was already said before, but it bears repeating, the most effective method of “anti-grappling” is to train grappling. Otherwise your just another martial theorist. I have personally eaten the lunch of a few of these types, both in training and on the street.

Don’t mind these other guys. They just don’t understand the power of a snap kick to the head.
Here are the proper steps to prevent the take-down:

See grappler. Be sure to square up properly so your hips are aligned properly for the kick. This usually means turning slightly sideways and shifting your weight to your back leg.

Grappler changes levels (his hips lower and he drives forward). This motion is quick so you’ll need to train the next step over and over until you get it right.

Shoot grappler with 9mm semi-auto pistol that you had previously hidden in your jacket because the previous week you were viciously accosted by a horny wild llama and DAMNIT that is NOT going to happen again. Not for the 8th time.

Kick dead grappler in head. Or knee. Your choice.
Take-down prevented.
